Recipe 16: Braised Ginger Chicken with Peanuts

Braising is an easy method of producing tender, succulent chicken. The result is spectacularly tasty!

Ingredients
  1. 1 tbsp oil
  2. 10g minced garlic
  3. 1/2 spring chicken, cut into bite-sized pieces
  4. 80g canned braised peanuts
  5. 20g ginger, cut into strips
  6. 10g red chilli, sliced
  7. 1 tbsp oyster sauce
  8. 1/4 cup water
  9. A pinch of ground white pepper
  10. 1 tsp cornflour
  11. 1 cup cooked Heavenly Rice
Method
  1. In a wok, heat the oil till hot. Fry the garlic until fragrant.
  2. Add in the rest of the ingredients, except for the cornflour and rice. Bring to a boil then simmer until the chicken is tender, about 25 minutes.
  3. To thicken the sauce, mix the cornflour with 1 tsp water. Stir into the sauce. Remove from the heat and serve with Heavenly Rice.
