Ingredients
  1. 200g french beans (diced)
  2. 70g sweet corn kernels
  3. 100g carrot (diced)
  4. 50g red capsicium (diced)
  5. 2 eggs
  6. 1 tbsp light soya sauce
  7. 1 tsp pink sea salt
  8. Pepper (desired amount)
  9. 20g butter
  10. Butterfly Pea Flower Rice (left overnight in the fridge)
  11. Coriander for garnishing (optional)
Steps
  1. Heat up 10g butter on a pan.
  2. Crack two eggs and stir-fry eggs.
  3. Remove from heat and set scrambled eggs aside.
  4. Heat up 10g butter in the same pan.
  5. Add diced french beans, carrots, sweet corn and fry.
  6. Then, add overnight butterfly pea flower rice and fry for a few minutes.
  7. Stir in light soya sauce, pink sea salt and pepper for seasoning. Mix well.
  8. Add red capsicium and scrambled eggs to fried rice.
  9. Toss and stir-fry for another few minutes.
  10. Ready to serve!
