Christmas Fried Rice (圣诞炒饭)

15 minutes is all you need to amp up some fun with a fruity twist to the typical fried rice, making sure that your Christmas Fried Rice is deliciously less “sinful”!

Ingredients
  1. 1 mango (sliced into cubes)
  2. 2 bowls of Heavenly Brown Rice (left overnight in the fridge)
  3. 500g bacon (sliced into bite-sized chunks)
  4. Salt (to taste)
  5. Spring onions for garnishing
Steps
  1. Fry bacon on a pan till crispy golden brown.
  2. Add cube-sized mango to pan and fry till fragrant.
  3. Place overnight Heavenly Brown Rice into pan and stir-fry.
  4. Remove from heat.
  5. Garnish with freshly chopped spring onions.
  6. Ready to serve.
