Heavenly Hainanese Chicken Rice

Hi there! How is your day today? It is the celebratory-worthy SG50 and to honor this special moment, we add a twist to traditional recipes of Singapore. Hainanese Chicken Rice, a dish so renowned that even foreigners have heard about it without ever knowing how it taste like, is found in nearly every nook and corner in Singapore. We modified this recipe with Heavenly Brown Rice and you’re in for a treat.

Chicken Ingredients
  1. 1 whole chicken (about 1.5kg), at room temperature
  2. 5 whole cloves garlic, crushed
  3. 7 slices ginger, unpeeled
  4. 1 tbsp sesame oil
  5. 2 cups jasmine rice
  6. ½ tsp salt
  7. 1 tbsp light soy sauce
  8. Sliced cucumber
  9. 1 small tomato, sliced
  10. Stalks of coriander
  11. A bunch of spring onion, to serve
Chicken Rice Ingredients
  1. Half a jug of chicken stock (from cooking the chicken)
  2. 1 bowl uncooked Heavenly Brown Rice, drained and washed
  3. A few pandan leaves
  4. ½ tspn salt
  5. 2 tbsp light soy sauce
  6. 5 shallots, chopped
  7. Ginger, chopped
Dressing Ingredients
  1. 1 tbsp sesame oil
  2. 2 tbsp light soy sauce
Instructions
  1. First, bring the whole chicken into the boiling water.
  2. Add in spring onions, sliced ginger, 5 garlic cloves into the same pot and bring to boil for about 20 to 30 minutes. Remember to reserve the soup afterwards.
  3. Lift out the chicken and place it in a big bowl of ice water to cool.
  4. Meanwhile, heat oil in a large saucepan over medium heat.
  5. Add in chopped ginger and shallots to fry until fragrant.
  6. Add in Heavenly Brown Rice and toss to coat for 30 minutes.
  7. Transfer rice to a rice pot and pour in half a jug of chicken stock, light soy sauce, salt, and knotted pandan leaves.
  8. Cook rice in rice cooker. Toss after cooked.
  9. In the meantime, prepare the dressing. Pour in 60ml of chicken stock in a small bowl.
  10. Mix in a tablespoon of light soy sauce and sesame oil. Stir to combine.
  11. Remove the chicken from the ice water and drain it to dry.
  12. Cut the chicken into small pieces and place it on a plate with sliced cucumber and tomatoes on the side.
  13. Drizzle the dressing on top of chicken.
  14. Garnish with coriander and spring onions, or others as desired
  15. Serve chicken with rice and condiments.

If you have any remaining chicken soup after that, you can season it and add in a few spring onion slices to serve as a light broth to accompany the meal.
