Heavenly Rice Claypot Treasures

The Year of the Goat is just around the corner! To usher in the Lunar New Year, we’ve prepared a special recipe, the Heavenly Rice Claypot Treasures. This recipe is not only nutritious, it is also delicious and easy to make! Good for reunion dinner and gatherings too.

Ingredients
  1. 3 Cups of Heavenly Brown Rice
  2. 1 Packet of Kai Lan
  3. 150g Waxed Pork Leg
  4. 2 Chinese Sausage
  5. 10 small Chinese Mushrooms
  6. 2 slice Gingers, shredded
  7. 2 Eggs
  8. ¾ cup Chicken Broth
Sauces
  1. 1 tablespoon light soy sauce
  2. 3 tablespoon dark soy sauce
  3. 1 tablespoon sugar
  4. 1 tablespoon sesame oil
  5. 1 ½ tablespoon abalone sauce
Instructions
  1. Cook the Heavenly Brown Rice in the claypot. Add water and ¾ cup Chicken Broth and cook for about 15 minutes, until the water is fully absorbed.
  2. Mix up all the sauces- 1 tablespoon of light soy sauce, followed by 3 tablespoons of dark soy sauce. Mix in 1 tablespoon of sugar, 1 tablespoon sesame oil, 1 ½ tablespoons abalone sauce and stir everything well.
  3. Add the Kai Lan vegetables into a pan of boiling water and cook for about 5 minutes.
  4. Arrange the cooked veggies, waxed pork and Chinese sausages in the claypot.
  5. Add the shredded ginger as garnish. Crack 2 eggs at one side of the pot and cover the claypot.
  6. Cook claypot over low heat for about 5 minutes.
  7. When done, do not open the pot. Let the pot simmer for about 15 minutes.
  8. Open the pot and add in the sauce mix. Add coriander for garnish and serve hot.
