Also known as Pounded Tea, the highly-nutritious Thunder Tea Rice is a traditional Hakka dish invented in the Qin Dynasty to energise weak hungry soldiers and fend off diseases during times of war. Containing ingredients such as basil and parsley that were traditionally used to treat ailments, the Thunder Tea Rice is often touted as a health food that is low in calories and high in fibre.

Ingredients
- 100g mint leaves
- 100g basil leaves
- 25g coriander
- 50g roasted white sesame
- 250g roasted skinned peanuts (skin removed)
- 2 tbsp green tea leaves
- 400ml hot water
- 1 tbsp salt
Toppings
- 300g chye sim (diced into small cubes)
- 300g kale (diced into small cubes)
- 300g long bean (diced into small cubes)
- 4 tau kwa (diced into small cubes)
- 250g roasted ground peanuts
- 300g leek (diced into small cubes)
- 80g chopped dried radish
- 300g chives (washed and diced)
- 300g celery (diced into small cubes)
- ½ cup minced garlic
- A dash of salt
- 1 ¼ cups Heavenly 100% Pure Vegetable Oil
Steps
- In a large pan, heat 3 tbsp of Heavenly 100% Pure Vegetable Oil.
- Place coriander, basil leaves and mint leaves into the pan and stir fry till soft.
- Add the stir fried mixture (consisting of coriander, basil leaves and mint leaves), green tea leaves, roasted peanuts, roasted white sesame, and hot water into blender.
- Blend till smooth. Add salt (amount depending on your preference) and blend again till smooth. Then, set the tea paste aside.
- Pour 3 tbsp of Heavenly 100% Pure Vegetable Oil to heated pan.
- Then, stir fry 1 tbsp of minced garlic with chye sim and set aside.
- Stir fry 1 tbsp of minced garlic with kale, add a dash of salt and set aside.
- Stir fry 1 tbsp of minced garlic with long beans, add a dash of salt and set aside.
- Stir fry 1 tbsp of minced garlic with leek, add a dash of salt and set aside.
- Stir fry 1 tbsp of minced garlic with chopped dried radish, add a dash of salt and set aside.
- Stir fry 1 tbsp of minced garlic with chives, add a dash of salt and set aside.
- Stir fry 1 tbsp of minced garlic with celery, add a dash of salt and set aside.
- Stir fry 1 tbsp of minced garlic with tau kwa, add a dash of salt and set aside.
- Place a portion of the 8 toppings all around a bowl of cooked brown rice, add roasted ground peanuts on top of rice, and pour tea paste over.
- Serve.
