Welcome to the SG50 Heavenly Nasi Lemak recipe. Nasi Lemak, a rice dish cooked in coconut milk that’s traditionally served with a variety of side dishes, is commonly found in food centres and well-known to almost every household in Singapore. Today, we put a twist on the traditional recipe so you know it’s possible to savor it in a healthier way.
Ingredients
- 3 cups of brown rice (washed and drained)
- 4 pandan leaves
- 4½ cups coconut milk
- 1 tbsp salt (or quantity as preferred)
- 3 – 4 slices of ginger
- 4 lemon grass (bruised)
- 1 cup dried ikan bilis
- 1 big onion slices cut into rings
- ½ cup tamarind juice
- Salt and sugar to taste
- ½ – ¾ cup of oil for frying
- 1¾ cup of instant chili paste
- 1 bowl of peanuts
Instructions
- Put 3 cups of brown rice into the rice pot.
- Place a few pandan leaves and slices of ginger into the rice.
- Add coconut milk and a teaspoon of salt into the rice, stir thoroughly.
- Cover the pot with alumunium foil and close the lid to cook.
- Stir the rice when cooked and now it’s ready to serve.
- Pour in spoonfuls of oil onto heated pan.
- Place the peanuts into heated oil and roast till peanuts are slightly darkened in color.
- Heat oil and fry instant chilli paste until the oil is separated.
- Add in tamarind juice, onions, bruised lemon grass stems.
- Bring to a low simmer before adding in ikan bilis.
- Simmer until cooked.
Serve the rice with a spoonful of peanuts and the chili paste on the side, accompanied by fresh cucumber slices and half of a hard-boiled egg onto a clean banana leaf on top of the plate if you’d prefer an even more traditional and authentic touch to it.
