The Year of the Goat is just around the corner! To usher in the Lunar New Year, we’ve prepared a special recipe, the Heavenly Rice Claypot Treasures. This recipe is not only nutritious, it is also delicious and easy to make! Good for reunion dinner and gatherings too.
Ingredients
- 3 Cups of Heavenly Brown Rice
- 1 Packet of Kai Lan
- 150g Waxed Pork Leg
- 2 Chinese Sausage
- 10 small Chinese Mushrooms
- 2 slice Gingers, shredded
- 2 Eggs
- ¾ cup Chicken Broth
Sauces
- 1 tablespoon light soy sauce
- 3 tablespoon dark soy sauce
- 1 tablespoon sugar
- 1 tablespoon sesame oil
- 1 ½ tablespoon abalone sauce
Instructions
- Cook the Heavenly Brown Rice in the claypot. Add water and ¾ cup Chicken Broth and cook for about 15 minutes, until the water is fully absorbed.
- Mix up all the sauces- 1 tablespoon of light soy sauce, followed by 3 tablespoons of dark soy sauce. Mix in 1 tablespoon of sugar, 1 tablespoon sesame oil, 1 ½ tablespoons abalone sauce and stir everything well.
- Add the Kai Lan vegetables into a pan of boiling water and cook for about 5 minutes.
- Arrange the cooked veggies, waxed pork and Chinese sausages in the claypot.
- Add the shredded ginger as garnish. Crack 2 eggs at one side of the pot and cover the claypot.
- Cook claypot over low heat for about 5 minutes.
- When done, do not open the pot. Let the pot simmer for about 15 minutes.
- Open the pot and add in the sauce mix. Add coriander for garnish and serve hot.
