Annyeong Heavenly Rice fans! How have you been? If you’re crazy about Korean drama or variety shows like us, then you might appreciate today’s CCTV dish too.
Introducing the Heavenly Tempura Kimchi Roll! Filled with lots of crunchy vegetables, kimchi and brown rice, this recipe is a great idea for a quick and easy meal.
Ingredients
- 3 stalks Spinach
- ½ Cucumber (sliced)
- ½ Red Capsicum (sliced)
- ½ Yellow Capsicum (sliced)
- 1 Carrot
- 150g Kimchi
- 2 Cups Cooked Heavenly Brown Rice
- 4 Tbsps Rice Vinegar
- 2 Sheets Roasted Seaweed
- 1 Cup Tempura Flour
- 1 Cup Water
Instructions
- Cut the capsicums into half, and then into slices
- Cut the spinach into slices
- Slice the carrots into thin strips
- Slice the cucumber into thin strips.
- In boiling water, cook the sliced spinach for about 30s- 1 minute. Do the same for the carrots.
- Pour the vinegar over the Heavenly Brown rice. Mix well.
- To prepare the kimchi roll, lay out a sheet of seaweed on the bamboo mat. Wet your hands so that the rice does not stick to your hands.
- Make a flat layer of brown rice.
- On top of the rice, lay out the spinach, followed by the sliced carrots.
- Lay the capsicum and cucumber on each side, and top it off with the kimchi.
- Roll everything up! Repeat the steps for the other Kimchi roll.
- Pour the water and mix with the tempura flour until evenly blended.
- Coat the roll in tempura flour, and deep fry until golden brown.
- Serve with fresh vegetables and Korean sauce (bibimbap sauce is great!)
