Brown Rice Gingerbread Crackers

Hello! We’ve been busy preparing for the Christmas holiday, and we want to share this Brown Rice Gingerbread Cracker recipe for you! Instead of flour, we’ll be using brown rice, flax seeds, chia seeds and quinoa to make this a healthier and more nutritious recipe. Plus the cracker tastes and looks great too!

Ingredients
  1. ½ cup flax seeds (soaked in water)
  2. ½ cup of dried cranberries
  3. 2 tbsp of sesame seeds
  4. 1 cup cooked quinoa
  5. 3 Tbsp. olive oil
  6. 1 tbsp chia seeds (soaked in water)
  7. 1 tsp. sea salt
  8. 1 cup cooked Heavenly Brown Rice
  9. 2½ tsp cinnamon powder
  10. 1 tbsp ginger powder
  11. 1 tsp nutmeg powder
Instructions
  1. Preheat oven to 180°C.
  2. Pour the cooked brown rice, soaked flax seeds and quinoa into the blender and blend well.
  3. Add in the olive oil, cranberries, sesame seeds, chia seeds, cinnamon, ginger and nutmeg powder. Mix well.
  4. On parchment paper, lay out the dough and use a rolling pin to flatten it.
  5. Use the cookie cutter to make the cracker shapes.
  6. Put them on the oven tray and bake in oven for 25-35 minutes, depending on the thickness of the cracker, until crispy and golden.
  7. Remove from oven and cool for 5 minutes.
  8. Use icing to create details such as smiley faces, bowties, and buttons to your gingerbread men. You’re done!

You can also add your favourite nuts and seeds like walnuts, almonds, pumpkin seeds and chia seeds to add more crunch. We hope you enjoyed this recipe! Share the healthy goodies with your friends and family. Happy holidays!
