Heavenly Rice Stuffed Turkey

It’s nearly Christmas! Are you busy getting ready for the festive season? Here’s a recipe we’ll like to share today- the Heavenly Rice Stuffed Turkey! The turkey will be a sight to behold and a joy to share with loved ones this holiday. We hope you enjoy the delicious flavours!

Stuffed Turkey Ingredients
  1. 1 fresh turkey (10 to 12 pounds)
  2. 1 ½ cups cooked brown rice
  3. 100g cashews
  4. 175g of unsalted butter
  5. 2 lemons, zested and juiced
  6. 1 large onion, chopped
  7. 4 cloves garlic, chopped
  8. Fresh thyme leaves
  9. Rosemary
  10. Black Pepper
  11. Salt
Stuffed Turkey Instructions
  1. Preheat oven to 180 degrees Celsius.
  2. In a large bowl, mix the cooked rice with the chopped onions, chopped garlic and cashews. Sprinkle in one tablespoon of pepper, and mix well. Add 2 tablespoons of lemon juice, and mix it in evenly.
  3. Rub the turkey all over (insides too!) with butter, lemon, rosemary and salt.
  4. Fill the inside of the turkey with the rice mix, and tie up the legs with some string to prevent the stuffing from falling out. Cover it with aluminium foil. Bake in oven for 2 ½ hours until golden brown.
  5. One hour into roasting the turkey, add potatoes to bake on a lower tray.
  6. Serve with fresh lettuce and cherry tomatoes garnish.
  7. Enjoy with the turkey gravy and cranberry sauce!

While waiting for the turkey to cook in the oven, you can start making the gravy and cranberry sauce.

Turkey Gravy
  1. 8 cups chicken broth
  2. 1 onion, sliced
  3. ½ cup all-purpose flour
  4. 2 tablespoons of butter
  5. Turkey pan drippings
  6. Fried turkey giblets
  7. 1 tablespoon parsley
  8. ½ teaspoon black pepper
  9. 2 tsp rosemary
  10. 2 tsp thyme
  11. 1 bay leaf
Turkey Gravy Instructions
  1. Melt 2 tablespoons of butter in the pan, and stir fry some sliced onions until lightly brown.
  2. Add in the turkey giblets and cook until lightly brown.
  3. Pour in 8 cups of chicken broth, and then add in 1 teaspoon of rosemary, 2 teaspoons of thyme. and one bay leaf. Add in turkey drippings from the oven pan too.
  4. Put on the lid and let it simmer at low heat for 2 hours.
  5. Serve as dip for stuffed turkey.
Cranberry Sauce
  1. 350g fresh cranberries, washed and dried
  2. 2 cups sugar
  3. ½ cup water
  4. 1 cinnamon stick
  5. ¼ tsp ground nutmeg
  6. ½ cup orange juice
Cranberry Sauce Instructions
  1. Wash 350g of cranberries and add in ½ cup of water.
  2. Pour and mix in 2 cups of sugar and mix gently over medium heat.
  3. Add in a cinnamon stick and ¼ teaspoon of nutmeg and stir for 5-7 minutes over low heat.
  4. Add in ½ cup of orange juice.
  5. Serve as dip for stuffed turkey.

This stuffed turkey may take up quite a lot of cooking time, but be rest assured- the taste is heavenly! One of the highlights is the smoky, tasty rice that has been soaking in the turkey essence and herbs the entire time in the oven! Absolutely finger licking delicious.
