Heavenly Sambal Fried Rice

You know what your tastebuds need? A fried rice with a spicy kick, basically a comforting mixture of Heavenly Brown Rice, garlic, onion and Sambal belacan. Good enough on its own to pass off as lunch and hearty enough for dinner with other dishes.

Ingredients
  1. 2 cups Heavenly Brown Rice
  2. 3½ cups water
  3. 3 shallots (minced)
  4. 4 cloves garlic (minced)
  5. 200g chicken breast (diced)
  6. ¼ tsp pepper
  7. ¼ tsp salt
  8. 2 tbsp kecap manis
  9. 4 tbsp sambal belacan
  10. 3 long beans (diced)
  11. 3 tbsp oil
  12. Salt and pepper to taste
Ingredients
  1. 4 eggs (sunny side-up)
  2. Crispy fried ikan bilis
  3. Crispy fried shallots
  4. Cucumber slices
  5. Sambal belacan
Steps
  1. Cook 2 cups of Heavenly Brown Rice with 3½ cups water in rice cooker. Once cooled, refrigerate overnight.
  2. Heat 3 tbsp oil in the wok.
  3. Add in minced shallots and garlic.
  4. Fried till fragrant.
  5. Add in 4 tbsp sambal belacan.
  6. Fry for a while till fragrant.
  7. Add in 200g diced chicken breast and stir fry till cooked.
  8. Add in diced long beans and fry for 1 minute.
  9. Add the cooked Heavenly Brown Rice, stir till well combined.
  10. Season with 2 tbsp kecap manis, salt and pepper to taste
  11. Stir fry 2 more minutes till rice is fragrant and seasoning are mixed through.
  12. Serve with crispy sunny side up egg, fried shallots, fried ikan bilis and slices of cucumbers.
