Recipe 11: Seafood Mui Fan

Why bother to buy this popular dish from the hawker when you can rustle up an equally delicious version in a matter of minutes?

  1. 1 tbsp oil
  2. 2 tsp minced garlic
  3. 30g squid, sliced
  4. 30g tiger prawns
  5. 30g xiao bai cai, sliced
  6. 30g fishcake, sliced
  7. 1/4 cup chicken stock
  8. 1 tbsp sesame oil
  9. A pinch of salt and ground white pepper
  10. 2 tbsp cornflour
  11. 1 egg, lightly beaten
  12. 1 cup cooked Heavenly Rice
  13. 30g pickled green chilli, to serve
  1. In a wok, heat the oil until hot. Fry the garlic till fragrant.
  2. Add the squid, prawns and cai xin. Stir-fry for 1 minute.
  3. Stir in the fishcake, stock, sesame oil, salt, pepper, cornflour and egg.
  4. Pour the thickened sauce over the Heavenly Rice and serve with pickled chilli.
