Recipe 13: Yam Rice

A very popular Chinese peasant dish that uses tender and moist yam to make a tasty and substantial meal.

  1. 2 tsp oil
  2. 2 cloves garlic, crushed
  3. 1 tbsp dried shrimps
  4. 1 tbsp dried scallops, shredded
  5. 1 cup Heavenly Rice
  6. 2 cups chicken stock
  7. 2 tbsp Chinese sausage, thinly sliced
  8. 200g yam, peeled and cut into 2cm cubes
  1. 2 tsp coriander leaves
  2. 2 tsp fried shallots
  1. In a wok, heat the oil until hot. Fry the garlic and dried shrimps until fragrant.
  2. Add the rice, stock, Chinese sausage and yam. Transfer everything to a rice cooker and cook as you normally would for rice.
  3. Serve garnished with coriander leaves and fried shallots.
