Recipe 14: Middle Eastern Pilaf

This looks and tastes extraordinary: a fruity, aromatic dish that’s both savoury and sweet.

Ingredients
  1. 1 cup cooked Heavenly Rice
  2. 60g cooked chicken fillet, cut into bite-sized pieces
  3. 50g onion, chopped
  4. 50g orange, peeled and cubed
  5. 35g raisins
  6. 35g dates, chopped
  7. 30g spring onion, chopped
  8. 30g parsley, chopped
  9. 2 tbsp lemon juice
  10. 1 tbsp extra virgin olive oil
  11. A pinch of allspice powder
  12. A pinch of salt and pepper
Method
  1. Combine all the ingredients together and toss well.
