Recipe 26 – Valentine’s Day: Rice and Vegetable Minestrone Soup

Minestrone is a thick Italian vegetable soup that is incredibly easy to make. Since it’s hearty and filling, minestrone is a healthy option for those days when you only have time to whip up a quick meal.

  1. 2 tsp extra virgin olive oil
  2. 1 tbsp garlic, minced
  3. 30g white onion, diced
  4. 30g carrot, diced
  5. 30g celery, diced
  6. 30g tomato, seeded and diced
  7. 50g cooked Heavenly Rice
  8. 1/2 cup red wine
  9. 1 cup tomato juice
  10. 1 cup chicken stock
  11. Salt, pepper and sugar to taste
  1. 1 stalk celery leaves
  1. In a medium pot, heat the oil. Fry the garlic and onion until fragrant.
  2. Add the carrot and celery, and fry for another 3 minutes.
  3. Add the rest of the ingredients, bring to a boil then reduce to a simmer and cook for 5 minutes.
  4. Season with salt, pepper and sugar. Garnish with celery leaves.
