Watermelon Fried Rice with Chicken Floss Topping (嘻嘻哈哈西瓜炒饭)

Ingredients
  1. 3 cloves garlic (chopped)
  2. 30g sweet pea (diced)
  3. 500g tiger prawns (deshelled)
  4. 1 watermelon
  5. 2 bowls of Heavenly Brown Rice (left overnight in the fridge)
  6. 1 tbsp light soya sauce
  7. 2 tbsp oyster sauce
  8. Pepper (desired amount)
  9. 3 tbsp Heavenly 100% Pure Vegetable Oil
  10. 50g roasted cashews
  11. Chicken floss (desired amount)
  12. Coriander for garnishing
Steps
  1. Use a melon baller to scoop up balls of watermelon. Set aside.
  2. Heat up oil on a pan.
  3. Add garlic pan and fry.
  4. Add deshelled prawns and stir fry until they turn orange. Remove from heat.
  5. Using the same oil, place overnight Heavenly Brown Rice onto pan.
  6. Add light soya sauce, oyster sauce, pepper, sweet peas, and roasted cashews.
  7. Mix well and stir-fry.
  8. Place prawns and watermelon balls into fried rice and mix well.
  9. Remove from heat and scoop fried rice into an empty watermelon shell.
  10. Serve hot.
